In this blog post, when referring to Citronella, I am speaking about the plant "pelargonium citrosum." Citronella is a name used to describe multiple plants, not all of which are edible, so please understand that this blog post is speaking about pelargonium citrosum specifically.
So I was in my garden, trimming back my Citronella (pelargonium citrosum) plants to make space to plant more herbs. I trimmed back a lot of leaves and not wanting to waste them, I looked up online if there was any way to use these leaves.
I came across an article by Better Homes & Gardens, that mentioned that like all scented geraniums, the citronella plant's leaves and flowers are edible and full of flavor.
The article also suggested a few different ways that Citronella can be used. One idea was to add the leaves to fresh to salads for a little kick of citrus flavor. Another suggestion was to coat the flowers with sugar and use them to decorate cookies and cakes.

The next article I came across, which is what inspired me to make my own Simple Syrup was this article from Champagne Tastes titled: CITRONELLA PLANT SIMPLE SYRUP
I used way more Citronella leaves than suggested though.
